After a celebrated journey abroad, I am returning to my roots with the opening of Stovell’s MX in the heart of Polanco, Mexico City. This is more than a restaurant—it is a tribute to the richness of Mexican ingredients, the spirit of its people, and the vibrant renaissance of its cuisine on the world stage.
The global culinary spotlight is now turning towards Mexico, and with it comes the exhilarating challenge of interpreting its traditions through the lens of a chef who has spent a lifetime abroad. For me, this is not a reinvention but a reconnection—a deeply personal and professional journey to honour the land that first shaped my palate.
