Philosophy

I aim to deliver elegant, delicious food that is exciting to experience, celebrating each element of the dish and allowing it to sing.

My signature dishes showcase ingredients cooked over wood – each wood carefully chosen to match the meat, fish or vegetable being grilled. My restaurant is located next to the picturesque Chobham Woods and it’s there, in nature, that I find ideas for my menus.

Spending more time in Mexico in recent years has led me to rediscover the ingredients and dishes of my youth, and I’ve enjoyed bringing the inspiration these spark in me back to the restaurant in Surrey.
